During the last decades, Advances in molecular engineering and biotechnology have resulted in the discovery of a large number of therapeutic and antigenic proteins. The problem, however, is the need for the development of suitable protein delivery devices. Important efforts have already been focused on the design of carrie s for the transport of proteins across mucosal barriers, i.e. nasal and intestinal mucosa. Among them, polymeric nanoparticles have shown a certain degree of success for the delivery of proteins and vaccines to the systemic circulation and to the immune system [1-2]. For more than a two decade it focused on chitosan and its derivatives as protein carrier in noninvasive delivery systems.
